  • 1 pound ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 can 15 ounces black beans, drained and rinsed
  • 1 can 15 ounces kidney beans, drained and rinsed
  • 1 can 15 ounces corn, drained
  • 1 can 14.5 ounces diced tomatoes with green chilies
  • 1 can 15 ounces tomato sauce
  • 2 cups beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese for topping
  • Fresh cilantro chopped (for garnish, optional)

Method
 

  1. In a large pot over medium heat, brown the ground beef until fully cooked. Drain excess fat if necessary.
  2. Add the chopped onion and minced garlic to the pot, cooking until the onion is translucent, about 3-4 minutes.
  3. Stir in the black beans, kidney beans, corn, diced tomatoes, tomato sauce, and beef broth.
  4. Add the chili powder, cumin, paprika, salt, and pepper. Stir well to combine.
  5. Bring the mixture to a boil, then reduce heat to low and let it simmer for 20-30 minutes, stirring occasionally.
  6. Taste and adjust seasoning if needed.
  7. Serve hot, topped with shredded cheddar cheese and chopped cilantro if desired.
