  • 1/2 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup chocolate ganache store-bought or homemade

Method
 

  1. Preheat your oven to 350°F. Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture, mixing until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the semi-sweet chocolate chips.
  7. Scoop about 2 tablespoons of cookie dough and flatten it slightly in your palm. Place about a teaspoon of chocolate ganache in the center, then wrap the dough around the ganache, sealing it completely.
  8. Place the filled cookie dough balls on the prepared baking sheet, leaving space between each one.
  9. Bake for 10-12 minutes, until the edges are set but the centers are still soft.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
