  • 1 lb Boneless Skinless Chicken Breasts
  • 2 tbsp Olive Oil can be substituted with any neutral oil
  • 1 tbsp Chili Powder adjust quantity to taste
  • 1 tsp Cumin no direct substitute
  • 1 tsp Paprika smoked paprika can be used
  • to taste Salt
  • to taste Pepper
For the Veggies
  • 1 cup Bell Peppers (Red, Yellow, Green) use any combination
  • 1 cup Corn fresh, frozen, or canned
  • 1 cup Diced Tomatoes can substitute with crushed tomatoes
For the Cheese and Garnish
  • 1 cup Cheddar Cheese can substitute with Monterey Jack
  • to taste Sour Cream (optional) Greek yogurt can be used as a healthier alternative
  • to taste Fresh Cilantro (optional) omit if cilantro isn't preferred

Preparation
  1. Cut boneless, skinless chicken breasts into bite-sized pieces and season with chili powder, cumin, paprika, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering.
  3. Add seasoned chicken pieces in a single layer and cook for 5-7 minutes until browned and cooked through.
  4. Sauté sliced bell peppers for 5 minutes until they soften.
  5. Stir in corn and diced tomatoes, and cook for an additional 3-5 minutes.
  6. Reduce heat to low, sprinkle cheddar cheese over the mixture, cover, and let sit for 2-3 minutes until cheese is melted.
  7. Garnish with fresh cilantro if desired and serve.
