Method
- Preheat your oven to 400°F (200°C).
- Season the chicken breasts with salt and black pepper on both sides.
- In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken breasts and sear for about 5 minutes on each side until golden brown.
- Once the chicken is seared, remove the skillet from heat. Layer the halved cherry tomatoes and sliced mozzarella cheese on top of the chicken.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F).
- Remove the skillet from the oven and sprinkle fresh basil leaves over the top. Drizzle with balsamic glaze before serving.

Notes
- For added flavor, marinate the chicken in Italian seasoning or lemon juice for 30 minutes before cooking.
- You can also substitute the cherry tomatoes with sun-dried tomatoes for a different taste.
