In a mixing bowl, combine the peanut butter, powdered sugar, crushed Butterfinger bars, and vanilla extract. Mix until well combined and a dough forms.
Using your hands, roll the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper.
Once all the balls are formed, freeze them for about 30 minutes to firm up.
While the balls are chilling, melt the chocolate chips and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
Remove the balls from the freezer and dip each one into the melted chocolate, ensuring they are fully coated. Return them to the parchment-lined baking sheet.
Once all the balls are coated, refrigerate them for at least 15 minutes to set the chocolate.
Serve chilled or at room temperature.
