Carefully slice each date lengthwise on one side to create an opening, being careful not to cut all the way through.
Stuff each date with approximately 1 teaspoon of Boursin cheese, pressing it gently to fill the cavity.
In a small bowl, mix the chopped pistachios, honey, olive oil, sea salt, and black pepper until well combined.
Place the stuffed dates on a baking sheet lined with parchment paper.
Spoon the pistachio mixture over each stuffed date, pressing it down slightly to adhere.
Roast in the preheated oven for 12-15 minutes, or until the dates are warm and the pistachios are lightly toasted.
Remove from the oven and let cool for a few minutes before serving.
