  • 2 pounds Chicken breasts or chicken thighs for extra juiciness
  • 2 tablespoons Vegetable oil or olive oil for flavor

For the Dipping Sauce
  • 1/2 cup Mayonnaise or Greek yogurt to lighten
  • 1/4 cup Sweet chili sauce must-have ingredient
  • 1 teaspoon Sriracha omit for milder taste
For Assembly
  • 8 pieces Skewers soak wooden ones for 30 minutes
  • 1/4 cup Fresh cilantro for garnish
  • 2 pieces Lime wedges for garnish

Method
 

Preparation
  1. Soak wooden skewers in water for at least 30 minutes.
  2. Slice chicken breasts into uniform, bite-sized pieces.
  3. In a medium bowl, whisk together vegetable oil, soy sauce, honey, garlic powder, ginger powder, red pepper flakes, salt, and pepper. Pour over chicken and let marinate for at least 30 minutes.
  4. In another bowl, combine mayonnaise, sweet chili sauce, and sriracha. Mix until smooth and set aside.
  5. Thread marinated chicken pieces onto skewers, leaving space between each piece.
  6. Preheat grill to medium-high heat (about 375°F or 190°C).
  7. Grill skewers for approximately 10-15 minutes, turning occasionally, until chicken is cooked through and has a golden char.
  8. Drizzle with dipping sauce or serve on the side. Garnish with cilantro and lime wedges before serving.
