  • 3 ripe bananas mashed
  • 1 cup Greek yogurt
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar packed
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup chopped walnuts or pecans optional
  • 1/2 teaspoon ground cinnamon optional

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
  2. In a large mixing bowl, combine the mashed bananas, Greek yogurt, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix until well combined.
  3. In a separate bowl, whisk together the baking soda, baking powder, salt, flour, and cinnamon (if using).
  4. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix. If desired, fold in the chopped walnuts or pecans.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  6. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the banana bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
