Ingredients

  • 2 large boneless skinless chicken breasts (about 1 pound total)
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs preferably Italian seasoned
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 2 large eggs
  • 1 tablespoon water
  • 2 tablespoons olive oil

Method

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. In a shallow bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, oregano, salt, and black pepper. Mix well.
  3. In another shallow bowl, whisk together the eggs and water until well combined.
  4. Place the flour in a third shallow bowl.
  5. Take each chicken breast and coat it in flour, shaking off any excess. Then dip it into the egg mixture, allowing any excess to drip off. Finally, press the chicken into the Parmesan breadcrumb mixture, ensuring it is fully coated on both sides.
  6. Place the coated chicken breasts on the prepared baking sheet. Drizzle the olive oil over the top of the chicken.
  7. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the coating is golden brown and crispy. The internal temperature should reach 165°F.
  8. Remove from the oven and let the chicken rest for 5 minutes before slicing. Serve warm.
