- Heat a large skillet over medium heat and add the thick cut bacon. Cook for about 8-10 minutes until crispy, then transfer to a plate lined with paper towels.
- In a mixing bowl, whisk together the eggs, hot sauce, salt, and pepper. Heat olive oil in a separate pan, pour in the egg mixture, and cook for 3-4 minutes until fluffy.
- Slice the avocado in half, remove the pit, and scoop into a bowl. Add garlic powder, salt, pepper, and lime juice, then mash until smooth.
- Butter one side of each sourdough slice. Layer one slice with cheese, bacon, eggs, and avocado spread, top with cheese and another slice butter-side up.
- Cook the sandwich in the skillet for 2-3 minutes until golden, flip and grill the other side for another 2-3 minutes until cheese melts.
- Remove from skillet, let cool briefly, slice in half, and serve hot.
