Ingredients
  

Muffin Batter
  • 2 cups All-purpose Flour can be swapped with gluten-free flour
  • 1 tbsp Baking Powder
  • 1 tsp Baking Soda
  • 1/2 tsp Salt sea salt for a twist
  • 2 tsp Ground Cinnamon increase for more flavor
  • 1 cup Granulated Sugar can replace half with brown sugar
  • 2 cups Firm Apples e.g., Honeycrisp, Granny Smith
  • 1/2 cup Unsalted Butter melted for batter, cold for topping
  • 1 Egg can substitute with a flax egg
  • 1 cup Milk almond or oat milk for dairy-free
Streusel Topping
  • 1/2 cup Brown Sugar
  • 1/2 cup Oats quick oats preferred
  • 1 tsp Cinnamon

Method
 

Muffin Preparation
  1. Preheat oven to 350°F (175°C) and prepare muffin tin with liners or grease.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. In a medium bowl, mix melted butter, sugar, egg, and milk until smooth.
  4. Fold dry ingredients into wet ingredients gently to combine.
  5. Fold in diced apples until evenly distributed throughout the batter.
  6. In a small bowl, combine cold cubed butter, oats, brown sugar, flour, and cinnamon to make streusel.
  7. Spoon batter into muffin tin, filling two-thirds full, and sprinkle streusel on top.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack.
