Method
 

Prepare Crust
  1. In a mixing bowl, whisk together 1 ½ cups of all-purpose flour and ½ cup of powdered sugar. Cut in ½ cup of cold, unsalted butter until crumbly. Press the mixture into a 9-inch tart pan and chill.
Blind Bake Crust
  1. Dock the chilled crust with a fork, line with parchment, add weights, and bake for 15-20 minutes until golden. Cool on a wire rack.
Make Curd
  1. Whisk together ½ cup grapefruit juice, 2 tablespoons grapefruit zest, ¾ cup sugar, and 2 eggs in a saucepan over medium heat until thickened. Stir in ¼ cup butter until melted.
Cool and Set
  1. Pour grapefruit curd into the cooled tart crust and refrigerate for at least 2 hours.
Serve
