Preparation Steps
- Preheat your oven to 350°F (175°C) and prepare an 8-inch rectangular dish by greasing it.
- In a medium mixing bowl, whisk together flour, baking powder, salt, granulated sugar, cinnamon, nutmeg, and cloves.
- In a large bowl, mix together applesauce, milk, melted butter, vanilla extract, and grated carrots until smooth.
- Pour the wet mixture into the dry ingredients and gently fold until just combined; do not overmix.
- Pour the batter into the prepared baking dish evenly.
- In another bowl, mix granulated sugar, brown sugar, and chopped nuts, then sprinkle this over the batter.
- Carefully pour very hot water over the mixture; do not stir.
- Bake for 40 to 50 minutes, or until the top is golden brown and a toothpick comes out clean.
- Allow to cool for 5 to 10 minutes before serving.
