  • 2 cups fresh pineapple juice
  • 1 cup mango juice
  • 1 cup coconut rum
  • 1/2 cup lime juice freshly squeezed
  • 1/4 cup simple syrup adjust to taste
  • 1 cup club soda or lemon-lime soda for extra sweetness
  • Ice cubes
  • Fresh pineapple and lime slices for garnish
  • Mint leaves for garnish

Method
 

  1. In a large pitcher, combine the pineapple juice, mango juice, coconut rum, lime juice, and simple syrup. Stir well to mix all the ingredients together.
  2. Taste the mixture and adjust the sweetness by adding more simple syrup if desired.
  3. Just before serving, add the club soda to the pitcher for a refreshing fizz. Stir gently to combine.
  4. Fill glasses with ice cubes and pour the punch over the ice.
  5. Garnish each glass with fresh pineapple slices, lime slices, and a sprig of mint.
  6. Serve immediately and enjoy your tropical escape!
