Ingredients
  

  • 2 cups frozen corn thawed
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 cup crumbled feta cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup crushed tortilla chips for topping

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the thawed corn, mayonnaise, sour cream, feta cheese, cheddar cheese, cilantro, lime juice, chili powder, garlic powder, salt, and black pepper. Mix until well combined.
  3. Transfer the mixture to a greased 9x13 inch baking dish, spreading it evenly.
  4. Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and slightly golden on top.
  5. Remove from the oven and sprinkle the crushed tortilla chips evenly over the top. Return to the oven for an additional 5-10 minutes, until the chips are crispy.
  6. Let the casserole cool for a few minutes before serving. Garnish with additional cilantro if desired.
