  • 1 cup Cooking Oil Any neutral oil like vegetable or canola.
  • 1.25 cups Coconut Juice Substitute with water or chicken stock mixed with honey.

Step-by-Step Instructions
  1. In a mixing bowl, combine salt, five-spice powder, soy sauce, and honey to create a marinade. Add crushed garlic and chopped shallots. Let chicken marinate for at least 30 minutes or up to 4 hours.
  2. Heat cooking oil in a deep frying pan over medium heat for about 5 minutes until shimmering.
  3. Remove drumsticks from marinade and fry in hot oil for 6-8 minutes per side until golden brown. Drain on paper towels.
  4. Wipe the pan clean, return to medium heat and add reserved marinade and coconut juice. Bring to a boil, then reduce to simmer.
  5. Simmer the chicken for about 20 minutes, flipping occasionally to coat in sauce. Add water if needed to keep moist.
  6. Transfer chicken to a serving platter, spoon sauce over, and serve hot with steamed rice.
