- In a mixing bowl, combine salt, five-spice powder, soy sauce, and honey to create a marinade. Add crushed garlic and chopped shallots. Let chicken marinate for at least 30 minutes or up to 4 hours.
- Heat cooking oil in a deep frying pan over medium heat for about 5 minutes until shimmering.
- Remove drumsticks from marinade and fry in hot oil for 6-8 minutes per side until golden brown. Drain on paper towels.
- Wipe the pan clean, return to medium heat and add reserved marinade and coconut juice. Bring to a boil, then reduce to simmer.
