Heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
Add the minced garlic and cook for an additional 1 minute until fragrant.
Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.
Stir in the chopped cauliflower, diced tomatoes, smoked paprika, oregano, salt, and pepper. Mix well to combine.
Cover the skillet and reduce the heat to medium-low. Cook for about 10-12 minutes, stirring occasionally, until the cauliflower is tender.
If using, sprinkle the shredded cheddar cheese on top and cover the skillet again for 2-3 minutes until the cheese is melted.
Remove from heat and garnish with fresh parsley before serving.
