Step-by-Step Instructions
  1. In a large pot, melt 2 tablespoons of butter over medium-high heat. Add sliced mushrooms and sauté for 10–15 minutes until golden brown. Remove and set aside.
  2. In the same pot, melt 1 tablespoon of butter, then add diced onion, carrots, and celery. Cook for 8–10 minutes until tender and onion is translucent.
  3. Toss in chopped garlic and thyme, stirring for about 1 minute until fragrant.
  4. Pour in chicken broth, then add wild rice, cooked chicken, and sautéed mushrooms. Bring to a boil, then reduce heat and simmer for 20–30 minutes until rice is tender.
  5. Stir in milk or cream and grated Parmesan, cooking on low until cheese melts, about 2–3 minutes.
  6. Season with salt and pepper to taste, serve hot, garnished with thyme or Parmesan if desired.
