  • 6 units Eggs Fresh eggs
  • 1/2 cup Mayonnaise Greek yogurt is a lighter alternative
  • 1 tablespoon Dijon Mustard Yellow mustard can be substituted
  • 1 tablespoon Hot Sauce Adjust to taste
  • 1 teaspoon Smoked Paprika Regular paprika works as a substitute
  • 1/4 teaspoon Cayenne Pepper Use less for milder flavor
  • 1/2 teaspoon Dried Oregano Fresh oregano can also be used
  • 1/4 teaspoon Garlic Powder Use fresh garlic with caution
  • 1/4 teaspoon Onion Powder Fresh onion can replace it but should be sautéed
  • 1 teaspoon Granulated Sugar Omit for less sweetness
For the Topping
  • 12 units Shrimp Peeled and deveined
  • 1 tablespoon Olive Oil High smoke point oil is suitable
  • 1 unit Jalapeño Fresh pepper for crunch, swap for milder if preferred
  • 2 tablespoons Chives Fresh or can substitute parsley or green onions
  • 2 units Lemon Wedges Fresh lime can be used

Method
 

Preparation
  1. Boil the Eggs: Place fresh eggs in a medium saucepan, cover with cold water, bring to a boil, then remove from heat and let sit for 12 minutes.
  2. Cool the Eggs: Transfer boiled eggs to an ice bath for 5 minutes to make peeling easier.
  3. Prepare the Filling: Peel the eggs, slice in half, scoop out yolks, mash with mayonnaise, mustard, and hot sauce, and mix with spices. Chill for 30 minutes.
  4. Spice the Shrimp: Toss shrimp with remaining spices, pat dry, then sear in a skillet until pink and charred.
  5. Assemble the Deviled Eggs: Fill egg whites with yolk mixture, top with shrimp, jalapeño, and chives, serve with lemon wedges.

Notes

Use baking soda in boiling water for easier peeling. Assemble filling and eggs ahead of time for convenience.
