Step-by-Step Instructions
  1. In a large mixing bowl, whisk together warm, filtered water, buffalo sauce, and cream cheese until blended.
  2. In a separate bowl, sift unbleached all-purpose flour and salt. Gradually blend into the wet mixture.
  3. Cover the dough with a damp cloth and let it rest for 30-60 minutes.
  4. Perform three stretch and fold sessions spaced 30-60 minutes apart.
  5. Turn the dough onto a floured surface, flatten, and distribute cubed cream cheese and chopped chives.
  6. Shape the dough into a round ball and place it seam-side up in a floured banneton.
  7. Preheat the oven to 500°F (260°C) about 30 minutes before baking.
  8. Transfer the risen dough onto parchment paper, score it, and place it in a Dutch oven to bake for 20 minutes at 500°F.
  9. Remove the lid, reduce the temperature to 450°F, and bake uncovered for an additional 20-30 minutes.
  10. Cool completely on a wire rack before slicing.
