Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Pat the chicken thighs dry and season with salt and pepper.
  3. Heat olive oil in a Dutch oven, sear chicken thighs skin-side down for 4-5 minutes, then flip and sear other side for 2 minutes.
  4. Transfer the seared chicken to a plate.
  5. Whisk the Catalina dressing ingredients until smooth.
  6. Pour half of the Catalina sauce into the Dutch oven, place chicken skin-side up, and pour remaining sauce over.
  7. Cover and bake in the oven for 45 minutes.
  8. Uncover and bake for an additional 20-25 minutes.
  9. Serve hot, drizzling the sauce over the chicken and garnishing with fresh parsley.
