Ingredients

  • 8 ounces feta cheese, crumbled
  • 4 ounces cream cheese, softened
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • 1 teaspoon honey
  • 1 cup strawberries, hulled and halved
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the strawberries, balsamic vinegar, and a pinch of salt. Toss to coat and spread the strawberries on a baking sheet. Roast in the preheated oven for 15-20 minutes, or until they are soft and caramelized. Remove from the oven and let cool slightly.
  3. In a food processor, combine the crumbled feta cheese, cream cheese, olive oil, lemon juice, honey, and a pinch of pepper. Blend until smooth and creamy.
  4. Taste the whipped feta and adjust seasoning with salt and pepper as needed.
  5. To serve, spread the whipped feta on a serving platter and top with the roasted strawberries. Garnish with fresh basil leaves.
