- 8 ounces feta cheese, crumbled
- 4 ounces cream cheese, softened
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- 1 teaspoon honey
- 1 cup strawberries, hulled and halved
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine the strawberries, balsamic vinegar, and a pinch of salt. Toss to coat and spread the strawberries on a baking sheet. Roast in the preheated oven for 15-20 minutes, or until they are soft and caramelized. Remove from the oven and let cool slightly.
- In a food processor, combine the crumbled feta cheese, cream cheese, olive oil, lemon juice, honey, and a pinch of pepper. Blend until smooth and creamy.
- Taste the whipped feta and adjust seasoning with salt and pepper as needed.
- To serve, spread the whipped feta on a serving platter and top with the roasted strawberries. Garnish with fresh basil leaves.

- For a spicy kick, add a pinch of red pepper flakes to the whipped feta mixture.
