- 2 pounds boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 cup cherry tomatoes, halved
- 1 cup fresh spinach, chopped
- ½ cup heavy cream
- 1 cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- Fresh basil leaves for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the olive oil, garlic powder, Italian seasoning, salt, and black pepper. Add the chicken breasts and toss to coat evenly.
- Place the seasoned chicken breasts in a greased 9×13 inch baking dish.
- Scatter the halved cherry tomatoes and chopped spinach over the chicken.
- In a small bowl, mix the heavy cream, mozzarella cheese, and Parmesan cheese together. Pour this mixture evenly over the chicken and vegetables.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Remove from the oven and let it rest for 5 minutes before serving. Garnish with fresh basil leaves if desired.
Notes
- For added flavor, marinate the chicken in the olive oil and seasonings for at least 30 minutes before baking.
- Substitute the spinach with kale or arugula for a different taste and texture.
