  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • ¼ cup grated Parmesan cheese
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Cook the cheese tortellini according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced zucchini, yellow squash, and red bell pepper. Sauté for about 5-7 minutes until the vegetables are tender.
  3. Add the halved cherry tomatoes and minced garlic to the skillet. Cook for an additional 2-3 minutes, stirring frequently.
  4. Stir in the cooked tortellini, dried basil, dried oregano, salt, and pepper. Toss everything together and cook for another 2-3 minutes until heated through.
  5. Remove from heat and sprinkle with grated Parmesan cheese. Toss gently to combine.
  6. Serve warm, garnished with fresh basil leaves if desired.
