- 1 ½ pounds ground beef
- 1 cup crushed tortilla chips
- 1 cup shredded cheddar cheese
- ½ cup cream cheese, softened
- 1 jalapeño pepper, finely chopped (seeds removed for less heat)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 large egg
- 2 tablespoons Worcestershire sauce
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon chili powder
- ¼ cup barbecue sauce (for topping)
Instructions
- Preheat your oven to 350°F.
- In a large mixing bowl, combine the ground beef, crushed tortilla chips, cheddar cheese, cream cheese, jalapeño, onion, garlic, egg, Worcestershire sauce, smoked paprika, salt, black pepper, and chili powder. Mix until well combined, but do not overmix.
- Transfer the meat mixture to a loaf pan and shape it into a loaf.
- Spread the barbecue sauce evenly over the top of the meatloaf.
- Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F.
- Let the meatloaf rest for 10 minutes before slicing.
- Serve warm with your favorite sides.
Notes
- For a spicier kick, leave some seeds in the jalapeño or add a pinch of cayenne pepper to the meat mixture.
