Ingredients

  • 1 pound ground beef (80/20 blend)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 8 small flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onions
  • 1/4 cup pickles, sliced
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon mustard

Instructions

  1. In a large bowl, combine the ground beef, salt, black pepper, garlic powder, and onion powder. Mix gently until just combined, being careful not to overwork the meat.
  2. Preheat a large skillet or griddle over medium-high heat. Divide the beef mixture into 8 equal portions and shape them into balls.
  3. Place the meatballs onto the hot skillet. Using a spatula, smash each ball down to form a thin patty. Cook for about 3-4 minutes until the edges are crispy and browned.
  4. Flip the patties and cook for an additional 2-3 minutes until fully cooked. Remove from heat.
  5. While the patties are cooking, warm the flour tortillas in a separate pan or microwave until soft and pliable.
  6. Assemble the tacos by placing a patty on each tortilla. Top with shredded lettuce, diced tomatoes, shredded cheddar cheese, diced onions, and pickles.
  7. In a small bowl, mix together mayonnaise, ketchup, and mustard. Drizzle the sauce over the assembled tacos.
