  • 4 cups beef broth
  • 1 cup coconut milk
  • 3 tablespoons peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 8 ounces rice noodles
  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • 2 green onions, sliced
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a large pot, heat the vegetable oil over medium-high heat. Add the chopped onion and sauté for 3-4 minutes until translucent. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
  2. Add the sliced beef to the pot and cook until browned, about 3-5 minutes.
  3. Pour in the beef broth, coconut milk, peanut butter, soy sauce, fish sauce, and brown sugar. Stir well to combine and bring to a simmer.
  4. While the soup is simmering, cook the rice noodles according to package instructions. Drain and set aside.
  5. Add the sliced red bell pepper and snap peas to the soup, cooking for an additional 3-4 minutes until the vegetables are tender but still crisp.
  6. To serve, place a portion of the cooked rice noodles in a bowl, ladle the hot soup over the noodles, and top with sliced green onions and fresh cilantro. Serve with lime wedges on the side.
