- 1 pound beef sirloin, thinly sliced
- 2 tablespoons vegetable oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 4 cups beef broth
- 1 cup coconut milk
- 3 tablespoons peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 8 ounces rice noodles
- 1 red bell pepper, sliced
- 1 cup snap peas
- 2 green onions, sliced
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- In a large pot, heat the vegetable oil over medium-high heat. Add the chopped onion and sauté for 3-4 minutes until translucent. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
- Add the sliced beef to the pot and cook until browned, about 3-5 minutes.
- Pour in the beef broth, coconut milk, peanut butter, soy sauce, fish sauce, and brown sugar. Stir well to combine and bring to a simmer.
- While the soup is simmering, cook the rice noodles according to package instructions. Drain and set aside.
- Add the sliced red bell pepper and snap peas to the soup, cooking for an additional 3-4 minutes until the vegetables are tender but still crisp.
- To serve, place a portion of the cooked rice noodles in a bowl, ladle the hot soup over the noodles, and top with sliced green onions and fresh cilantro. Serve with lime wedges on the side.
Notes
- For a spicier kick, add sliced jalapeños or a dash of sriracha to the soup.
- You can substitute the beef with chicken or tofu for a different protein option.
