Description

Delicious Salted Caramel Cheesecake Cookies that combine the rich flavors of cheesecake and caramel in a delightful cookie form.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup cream cheese, softened
  • 1/2 cup caramel sauce (plus extra for drizzling)
  • 1/2 teaspoon sea salt (for sprinkling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until creamy.
  4. Add the egg and vanilla extract to the butter mixture and beat until well combined.
  5. Mix in the softened cream cheese until smooth.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Fold in the caramel sauce gently, being careful not to overmix.
  8. Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  9. Sprinkle a pinch of sea salt on top of each cookie.
  10. Bake for 10-12 minutes or until the edges are lightly golden.
  11. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  12. Drizzle additional caramel sauce over the cooled cookies before serving.

Notes

  • For a richer flavor, try adding 1/2 cup of chopped nuts or chocolate chips to the dough.
  • To make these cookies even more decadent, consider sandwiching two cookies with a layer of cream cheese frosting or additional caramel sauce.
