A delicious and refreshing rotisserie chicken salad featuring grapes and almonds, perfect for a light meal or as a sandwich filling.

- 3 cups cooked rotisserie chicken, shredded
- 1 cup red grapes, halved
- 1/2 cup celery, finely chopped
- 1/2 cup sliced almonds
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped (optional)
Instructions
- In a large mixing bowl, combine the shredded rotisserie chicken, halved grapes, chopped celery, and sliced almonds.
- In a separate small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, garlic powder, salt, and pepper until smooth.
- Pour the dressing over the chicken mixture and gently toss until everything is well coated.
- If using, fold in the chopped parsley for added flavor and color.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve the chicken salad on a bed of greens, in a sandwich, or in a wrap as desired.
Notes
- For a lighter version, substitute Greek yogurt for half of the mayonnaise.
- Add diced apples or dried cranberries for a sweet twist.
