Instructions
- In a mixing bowl, combine the ricotta cheese, powdered sugar, vanilla extract, and salt. Mix until smooth and creamy.
- If using, add the cinnamon and mix until well incorporated.
- Using a small cookie scoop or your hands, form the ricotta mixture into bite-sized balls, about 1 inch in diameter.
- Roll each ball in the finely chopped pistachios until fully coated.
- Drizzle honey over the pistachio-coated bites or serve honey on the side for dipping.
- If desired, roll some of the bites in graham cracker crumbs for added texture.
- Place the bites on a serving platter and refrigerate for at least 30 minutes to firm up before serving.
