Ingredients

  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup green onions, sliced
  • For the dressing:
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 12 tablespoons water (to thin, if necessary)

Instructions

  1. In a large bowl, combine the mixed salad greens, shredded carrots, red bell pepper, cucumber, red cabbage, roasted peanuts, cilantro, and green onions. Toss gently to mix.
  2. In a separate bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, sesame oil, ginger, and garlic until smooth. If the dressing is too thick, add water a tablespoon at a time until desired consistency is reached.
  3. Drizzle the dressing over the salad and toss to coat evenly.
  4. Serve immediately or chill in the refrigerator for about 15-30 minutes to let the flavors meld.
