- 2 cups mixed salad greens (such as romaine and spinach)
- 1 cup shredded carrots
- 1 cup red bell pepper, thinly sliced
- 1 cup cucumber, thinly sliced
- 1/2 cup red cabbage, shredded
- 1/2 cup roasted peanuts, roughly chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup green onions, sliced
- For the dressing:
- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon grated fresh ginger
- 1 clove garlic, minced
- 1–2 tablespoons water (to thin, if necessary)
Instructions
- In a large bowl, combine the mixed salad greens, shredded carrots, red bell pepper, cucumber, red cabbage, roasted peanuts, cilantro, and green onions. Toss gently to mix.
- In a separate bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, sesame oil, ginger, and garlic until smooth. If the dressing is too thick, add water a tablespoon at a time until desired consistency is reached.
- Drizzle the dressing over the salad and toss to coat evenly.
- Serve immediately or chill in the refrigerator for about 15-30 minutes to let the flavors meld.
Notes
- For added protein, consider adding grilled chicken, tofu, or shrimp to the salad.
- Substitute the peanuts with sunflower seeds or cashews for a different crunch and flavor.
