- 2 cups frozen corn, thawed
- 1 cup mayonnaise
- 1 cup sour cream
- 1 cup crumbled feta cheese
- 1 cup shredded cheddar cheese
- 1/2 cup chopped fresh cilantro
- 1/4 cup lime juice
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup crushed tortilla chips (for topping)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the thawed corn, mayonnaise, sour cream, feta cheese, cheddar cheese, cilantro, lime juice, chili powder, garlic powder, salt, and black pepper. Mix until well combined.
- Transfer the mixture to a greased 9×13 inch baking dish, spreading it evenly.
- Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and slightly golden on top.
- Remove from the oven and sprinkle the crushed tortilla chips evenly over the top. Return to the oven for an additional 5-10 minutes, until the chips are crispy.
- Let the casserole cool for a few minutes before serving. Garnish with additional cilantro if desired.
Notes
- For a spicier version, add diced jalapeños or a dash of hot sauce to the mixture.
- You can substitute the feta cheese with cotija cheese for a more authentic flavor.
