- 2 large russet potatoes
- 4 cups vegetable oil (for frying)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1/2 cup cooked and crumbled bacon
- 1/4 cup sour cream
- 1/4 cup chopped green onions
- 1/4 teaspoon garlic powder
Instructions
- Begin by washing and peeling the russet potatoes. Cut them into thin strips to create fries.
- Rinse the cut fries in cold water to remove excess starch, then pat them dry with paper towels.
- In a large pot or deep fryer, heat the vegetable oil to 350°F. Carefully add the fries in batches, frying them for about 5-7 minutes or until golden brown and crispy.
- Remove the fries with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Season with salt and black pepper while they are still hot.
- Preheat your oven to 400°F. Spread the fries on a baking sheet and sprinkle the shredded cheddar cheese and crumbled bacon evenly over the top.
- Bake in the preheated oven for 5-7 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and drizzle with sour cream. Top with chopped green onions and a sprinkle of garlic powder.
- Serve immediately while hot and enjoy!

- For extra flavor, consider adding jalapeños or diced tomatoes as toppings.
