Description

A refreshing and easy-to-make salad featuring smashed cucumbers, lemon, and fresh herbs.


Ingredients

  • 2 large cucumbers
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon honey
  • 1 clove garlic, minced
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1/4 teaspoon black pepper

Instructions

  1. Start by washing the cucumbers thoroughly. Cut off the ends and slice each cucumber in half lengthwise.
  2. Place the cucumbers on a cutting board and use the flat side of a knife or a meat mallet to gently smash them until they crack open but remain intact.
  3. Cut the smashed cucumbers into bite-sized pieces and place them in a large bowl.
  4. Sprinkle the salt over the cucumbers and let them sit for about 10 minutes to draw out excess moisture.
  5. In a separate bowl, whisk together the olive oil, lemon juice, honey, minced garlic, dill, parsley, and black pepper to create the dressing.
  6. After the cucumbers have rested, drain any excess liquid and add them to the bowl with the dressing. Toss gently to combine.
  7. Let the salad sit for at least 15 minutes before serving to allow the flavors to meld.

Notes

  • For a spicy kick, add a pinch of red pepper flakes to the dressing.
  • You can substitute the fresh herbs with dried herbs if fresh ones are not available; use about one-third of the amount.
