A refreshing and easy-to-make salad featuring smashed cucumbers, lemon, and fresh herbs.

- 2 large cucumbers
- 1 teaspoon salt
- 2 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon honey
- 1 clove garlic, minced
- 1 tablespoon fresh dill, chopped
- 1 tablespoon fresh parsley, chopped
- 1/4 teaspoon black pepper
Instructions
- Start by washing the cucumbers thoroughly. Cut off the ends and slice each cucumber in half lengthwise.
- Place the cucumbers on a cutting board and use the flat side of a knife or a meat mallet to gently smash them until they crack open but remain intact.
- Cut the smashed cucumbers into bite-sized pieces and place them in a large bowl.
- Sprinkle the salt over the cucumbers and let them sit for about 10 minutes to draw out excess moisture.
- In a separate bowl, whisk together the olive oil, lemon juice, honey, minced garlic, dill, parsley, and black pepper to create the dressing.
- After the cucumbers have rested, drain any excess liquid and add them to the bowl with the dressing. Toss gently to combine.
- Let the salad sit for at least 15 minutes before serving to allow the flavors to meld.
Notes
- For a spicy kick, add a pinch of red pepper flakes to the dressing.
- You can substitute the fresh herbs with dried herbs if fresh ones are not available; use about one-third of the amount.
