  • 1 pound baby potatoes, halved
  • 1 cup green beans, trimmed
  • 1 lemon, zested and juiced

  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, combine the lemon zest, lemon juice, olive oil, minced garlic, oregano, thyme, salt, and black pepper. Whisk until well combined.
  3. Add the chicken thighs to the bowl and coat them thoroughly with the marinade. Let them marinate for at least 15 minutes (or up to 2 hours in the refrigerator for more flavor).
