- 2 pounds boneless, skinless chicken breasts
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice (about 2 lemons)
- 2 tablespoons honey
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- In a large bowl, whisk together the olive oil, lemon juice, honey, minced garlic, rosemary, thyme, salt, and black pepper until well combined.
- Add the chicken breasts to the marinade, ensuring they are fully coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or up to 4 hours for more flavor.
- Preheat your grill to medium-high heat.
- Remove the chicken from the marinade and let any excess drip off. Discard the marinade.
- Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F and the chicken is nicely charred.
- Remove the chicken from the grill and let it rest for 5 minutes before slicing.
Notes
- For extra flavor, try adding a teaspoon of smoked paprika to the marinade.
- If you prefer a spicier kick, include a pinch of red pepper flakes.
