Description
A refreshing summer pasta salad featuring whole wheat pasta, fresh arugula, cherry tomatoes, and a zesty lemon dressing.
Ingredients

- 8 ounces of whole wheat pasta (like penne or fusilli)
- 4 cups of fresh arugula, washed and dried
- 1 cup of cherry tomatoes, halved
- 1/2 cup of feta cheese, crumbled
- 1/4 cup of extra virgin olive oil
- 1/4 cup of fresh lemon juice (about 2 lemons)
- 2 cloves of garlic, minced
- 1 teaspoon of honey
- Salt and pepper to taste
- 1/4 teaspoon of red pepper flakes (optional)
Instructions
- Cook the whole wheat pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.
- In a large mixing bowl, combine the cooked pasta, arugula, cherry tomatoes, and feta cheese.
- In a small bowl, whisk together the olive oil, lemon juice, minced garlic, honey, salt, pepper, and red pepper flakes (if using) until well combined.
- Pour the dressing over the pasta salad and toss gently to combine all ingredients evenly.
- Taste and adjust seasoning if necessary. Serve immediately or chill in the refrigerator for 15-30 minutes for a refreshing taste.
Notes
- For a creamier dressing, add 1/4 cup of Greek yogurt to the dressing mixture.
- To add more protein, consider including grilled chicken or chickpeas to the salad.
