Description

Kulfi Overnight Oats is a creamy and delicious breakfast option that combines the flavors of traditional Indian kulfi with the convenience of overnight oats.


Ingredients

  • 1 cup rolled oats
  • 1 cup milk (dairy or non-dairy)
  • 1/2 cup plain yogurt (dairy or non-dairy)
  • 1/4 cup sweetened condensed milk
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon vanilla extract
  • 1/4 cup chopped pistachios
  • 1/4 cup chopped almonds
  • 1/4 cup raisins
  • Pinch of salt

Instructions

  1. In a large mixing bowl, combine the rolled oats, milk, yogurt, sweetened condensed milk, ground cardamom, vanilla extract, and a pinch of salt. Stir until well combined.
  2. Fold in the chopped pistachios, almonds, and raisins.
  3. Divide the mixture evenly into two or four jars or containers with lids.
  4. Seal the jars and refrigerate overnight (or for at least 6 hours) to allow the oats to soak and soften.
  5. Before serving, stir the oats and add additional milk if a thinner consistency is desired. Top with extra nuts or fruits if desired.

Notes

  • For a dairy-free version, use almond milk and coconut yogurt.
  • Add fresh fruit such as mango or berries on top before serving for added flavor and nutrition.
