Korean Cheese Hotteok is a delicious sweet and savory pancake filled with melted cheese, perfect for a snack or dessert.

- 1 cup all-purpose flour
- 1/2 cup warm water (about 110°F)
- 2 tablespoons sugar
- 1/2 teaspoon salt
- 1 teaspoon instant yeast
- 1/4 cup milk
- 1/4 cup shredded mozzarella cheese
- 1/4 cup chopped green onions (optional)
- 1 tablespoon vegetable oil (for frying)
Instructions
- In a mixing bowl, combine the warm water, sugar, and instant yeast. Let it sit for about 5 minutes until it becomes frothy.
- Add the flour, salt, and milk to the yeast mixture. Mix until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth.
- Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until it doubles in size.
- Once the dough has risen, punch it down and divide it into 4 equal pieces. Flatten each piece into a circle about 4 inches in diameter.
- Place a tablespoon of mozzarella cheese (and green onions, if using) in the center of each circle. Fold the edges of the dough over the filling and pinch to seal.
- Heat the vegetable oil in a skillet over medium heat. Place the filled dough seam-side down in the skillet. Cook for about 2-3 minutes on each side until golden brown and crispy.
- Serve hot, and enjoy the melted cheese inside!
Notes
- For a sweeter version, add a teaspoon of cinnamon and a tablespoon of brown sugar to the filling.
- You can also experiment with different cheeses, such as cheddar or pepper jack, for a spicy kick.
