- 2 pounds boneless, skinless chicken thighs
- 1 cup fresh peaches, diced
- 1/2 cup jalapeños, finely chopped (seeds removed for less heat)
- 1/4 cup honey
- 1/4 cup soy sauce
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 tablespoon fresh cilantro, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the diced peaches, jalapeños, honey, soy sauce, olive oil, garlic, ground ginger, black pepper, and salt. Mix well to create the marinade.
- Add the chicken thighs to the marinade, ensuring they are well coated. Let them marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.
- Place the marinated chicken thighs in a baking dish, pouring any remaining marinade over the top.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Remove from the oven and let the chicken rest for 5 minutes before slicing.
- Garnish with fresh cilantro before serving.
Notes
- For a smoky flavor, grill the marinated chicken thighs instead of baking them.
- Substitute the peaches with mango or pineapple for a different fruity twist.
