Description
A delicious and flavorful Italian Grinder Chicken Salad that combines shredded chicken with a creamy dressing and fresh vegetables, served in hoagie rolls.

- 2 cups cooked, shredded chicken
- 1/2 cup mayonnaise
- 1/4 cup plain Greek yogurt
- 1 tablespoon Dijon mustard
- 1 tablespoon red wine vinegar
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup diced celery
- 1/2 cup diced red bell pepper
- 1/4 cup sliced green onions
- 1/4 cup chopped fresh parsley
- 1/4 cup sliced pepperoncini (optional)
- 4 hoagie rolls or sub sandwich bread
- Lettuce leaves for serving
Instructions
- In a large mixing bowl, combine the shredded chicken, mayonnaise, Greek yogurt, Dijon mustard, red wine vinegar, garlic powder, onion powder, oregano, salt, and black pepper. Mix well until all ingredients are fully incorporated.
- Add the diced celery, red bell pepper, green onions, parsley, and pepperoncini (if using) to the chicken mixture. Stir until evenly distributed.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
- When ready to serve, slice the hoagie rolls in half and layer with lettuce leaves. Spoon the chicken salad generously onto the rolls.
- Serve immediately, or wrap the sandwiches in foil for a picnic or lunch on the go.
Notes
- For a lighter version, substitute half of the mayonnaise with additional Greek yogurt.
- Add diced avocado or chopped nuts for extra creaminess and crunch.
