Hot Honey Feta Chicken is a sweet and spicy dish featuring seared chicken breasts topped with a honey, feta, and red pepper flake mixture, baked to perfection.

- 2 large chicken breasts (about 1.5 pounds total)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1/2 cup crumbled feta cheese
- 1/4 cup honey
- 1 teaspoon red pepper flakes (adjust to taste)
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh parsley (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the chicken breasts dry with paper towels and season both sides with salt and black pepper.
- In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and sear for about 5-6 minutes on each side, until golden brown.
- While the chicken is cooking, in a small bowl, mix together the honey, red pepper flakes, and lemon juice.
- Once the chicken is seared, pour the honey mixture over the chicken, then sprinkle the crumbled feta cheese on top.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Remove from the oven and let it rest for 5 minutes. Garnish with chopped parsley before serving.
Notes
- For added flavor, marinate the chicken in olive oil, lemon juice, and garlic for 30 minutes before cooking.
- Serve the chicken over a bed of quinoa or with a side of roasted vegetables for a complete meal.
