- 2 medium zucchinis, sliced into half-moons
- 1 medium yellow onion, sliced
- 1 red bell pepper, sliced
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon ground ginger
- Salt and pepper to taste
- 2 green onions, chopped (for garnish)
- Sesame seeds (for garnish)
Instructions
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the sliced onions and bell pepper to the skillet. Stir-fry for about 3-4 minutes until they start to soften.
- Add the minced garlic and ground ginger to the skillet, stirring constantly for about 30 seconds until fragrant.
- Add the sliced zucchini to the skillet and continue to stir-fry for another 5-7 minutes until the zucchini is tender but still crisp.
- Pour the soy sauce and sesame oil over the vegetables, stirring to combine. Season with salt and pepper to taste.
- Remove from heat and garnish with chopped green onions and sesame seeds before serving.
