Description

A comforting and hearty meatball stew made with ground beef and pork, vegetables, and flavorful herbs.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 stalks celery, diced
  • 1 pound ground beef
  • 1 pound ground pork
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups beef broth
  • 2 cups potatoes, diced
  • 1 cup frozen peas
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
  2. Add the sliced carrots and diced celery to the pot, cooking for another 5 minutes until they begin to soften.
  3. In a large bowl, combine the ground beef, ground pork, salt, black pepper, oregano, basil, and red pepper flakes (if using). Mix well and form into small meatballs, about 1 inch in diameter.
  4. Add the meatballs to the pot and brown them on all sides, about 5-7 minutes.
  5. Pour in the diced tomatoes and beef broth, then add the diced potatoes and Worcestershire sauce. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 30 minutes, stirring occasionally.
  6. After 30 minutes, stir in the frozen peas and cook for an additional 5 minutes.
  7. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.

Notes

  • For a healthier version, substitute ground turkey for the beef and pork.
  • Add your favorite vegetables like green beans or bell peppers for extra flavor and nutrition.
