Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 3 stalks celery, diced
  • 4 medium potatoes, peeled and cubed
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 4 cups beef broth
  • 1 cup red wine (optional, can substitute with more beef broth)
  • 2 tablespoons tomato paste
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes and season with salt and pepper. Brown the beef on all sides, about 5-7 minutes. Remove the beef and set aside.
  2. In the same pot, add the diced onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  3. Add the carrots, celery, and potatoes to the pot. Cook for 5 minutes, stirring occasionally.
  4. Return the browned beef to the pot. Pour in the beef broth and red wine (if using). Stir in the tomato paste, thyme, rosemary, and bay leaf. Bring to a boil.
  5. Reduce the heat to low, cover, and let the stew simmer for 1.5 to 2 hours, or until the beef is tender.
  6. In the last 15 minutes of cooking, add the green beans. Adjust seasoning with salt and pepper as needed.
  7. Remove the bay leaf before serving. Garnish with fresh parsley.

Notes

  • For a thicker stew, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it into the stew during the last 10 minutes of cooking.
  • Feel free to add other vegetables like peas or mushrooms for extra flavor and nutrition.
