Description

A simple and delicious skillet dish made with ground beef and cauliflower, perfect for a quick weeknight meal.

Ingredients

Scale
  • 1 pound ground beef (80/20 blend)
  • 1 medium head of cauliflower, chopped into small florets
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes (canned or fresh)
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
  2. Add the minced garlic and cook for an additional 1 minute until fragrant.
  3. Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.
  4. Stir in the chopped cauliflower, diced tomatoes, smoked paprika, oregano, salt, and pepper. Mix well to combine.
  5. Cover the skillet and reduce the heat to medium-low. Cook for about 10-12 minutes, stirring occasionally, until the cauliflower is tender.
  6. If using, sprinkle the shredded cheddar cheese on top and cover the skillet again for 2-3 minutes until the cheese is melted.
  7. Remove from heat and garnish with fresh parsley before serving.

Notes

  • For a spicy kick, add a pinch of red pepper flakes or diced jalapeños when cooking the onion.
  • Substitute ground turkey or chicken for a leaner option, or use plant-based ground meat for a vegetarian version.
