- 1 pound ground beef (80/20 blend)
- 1 medium head of cauliflower, chopped into small florets
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup diced tomatoes (canned or fresh)
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup shredded cheddar cheese (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
- Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.
- Stir in the chopped cauliflower, diced tomatoes, smoked paprika, oregano, salt, and pepper. Mix well to combine.
- Cover the skillet and reduce the heat to medium-low. Cook for about 10-12 minutes, stirring occasionally, until the cauliflower is tender.
- If using, sprinkle the shredded cheddar cheese on top and cover the skillet again for 2-3 minutes until the cheese is melted.
- Remove from heat and garnish with fresh parsley before serving.
Notes
- For a spicy kick, add a pinch of red pepper flakes or diced jalapeños when cooking the onion.
- Substitute ground turkey or chicken for a leaner option, or use plant-based ground meat for a vegetarian version.
