- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 zucchini, sliced into ½-inch rounds
- 1 red onion, cut into wedges
- 8 ounces cherry tomatoes
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- Wooden or metal skewers
Instructions
- Preheat the grill to medium-high heat. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- In a large bowl, combine the olive oil, garlic powder, oregano, salt, and black pepper. Add the chopped vegetables and toss until they are evenly coated with the marinade.
- Thread the vegetables onto the skewers, alternating between different types for a colorful presentation.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.
- Remove the skewers from the grill and let them cool for a few minutes before serving.
Notes
- For added flavor, try marinating the vegetables for 30 minutes before grilling.
- You can also sprinkle some feta cheese on top after grilling for a delicious twist.
- If you prefer a spicy kick, add some sliced jalapeños to the skewers.
