- 1 pound large shrimp, peeled and deveined
- 1 medium pineapple, peeled, cored, and cut into 1-inch cubes
- 1 red bell pepper, cut into 1-inch pieces
- 1 green bell pepper, cut into 1-inch pieces
- 1/4 cup olive oil
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Wooden or metal skewers
Instructions
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- In a large bowl, whisk together the olive oil, soy sauce, honey, minced garlic, ground ginger, salt, and black pepper.
- Add the shrimp to the marinade and toss to coat. Let it marinate for 15-30 minutes.
- Preheat the grill to medium-high heat.
- Thread the marinated shrimp, pineapple cubes, and bell pepper pieces onto the skewers, alternating between shrimp and vegetables.
- Place the skewers on the grill and cook for 2-3 minutes on each side, or until the shrimp are opaque and cooked through.
- Remove from the grill and serve immediately.
Notes
- For a spicy kick, add a teaspoon of red pepper flakes to the marinade.
