Description

Grilled BBQ Chicken Skewers are a delicious and easy recipe perfect for impressing guests or enjoying a family meal.

Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup barbecue sauce (your favorite brand)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 bell pepper, cut into 1-inch pieces
  • 1 medium red onion, cut into wedges
  • Wood or metal skewers (if using wood, soak in water for 30 minutes)

Instructions

  1. In a large bowl, combine the barbecue sauce, olive oil, garlic powder, onion powder, smoked paprika, black pepper, and salt. Mix well to create a marinade.
  2. Add the chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Preheat your grill to medium-high heat.
  4. Thread the marinated chicken, bell pepper pieces, and onion wedges onto the skewers, alternating between chicken and vegetables.
  5. Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F.
  6. Remove from the grill and let rest for a few minutes before serving.

Notes

  • For a spicier kick, add a teaspoon of cayenne pepper to the marinade or use a spicy barbecue sauce.
  • You can substitute the chicken with shrimp or firm tofu for a different protein option. Add pineapple chunks for a sweet twist!
