- 2 cups broccoli florets
- 2 cups cauliflower florets
- 2 cups carrots, sliced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 medium red onion, cut into wedges
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, combine the broccoli, cauliflower, carrots, bell peppers, and red onion.
- In a small bowl, whisk together the olive oil, minced garlic, oregano, thyme, salt, black pepper, and red pepper flakes if using.
- Pour the olive oil mixture over the vegetables and toss until they are evenly coated.
- Spread the vegetables in a single layer on a large baking sheet.
- Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the vegetables are tender and slightly caramelized.
- Remove from the oven and garnish with fresh parsley before serving.
Notes
- For a sweeter flavor, add 1-2 tablespoons of balsamic vinegar before roasting.
- Feel free to substitute any of the vegetables with your favorites, such as zucchini, asparagus, or Brussels sprouts.
